I did have to bring the Shrimp to the doctor, and I often feel like I look so ragged when I go, so I jazzed it up a bit. Plus it was Cowboy's birthday and I knew we'd be having a special dinner. Little did I know that Wyatt's tummy made it a little hectic, but at the end of the day, Wyatt sat in his swing outside and Momma and Daddy enjoyed a great steak dinner. Thanks kiddo!
Cowboy grilled the steaks, and I prepped these bad boys:
Scott's Inside Out Loaded Potatoes (sans cheese) |
Here's what you do:
Boil red potatoes until fork tender.
Chop up some green onions.
Enjoy a beverage of choice. At 3:00 on a random Wednesday mine happened to be caffeine free coke.
Bake up some yummy bacon.
Combine all in a bowl and then place on a baking dish. (Sorry no pics there.) Top with cheese (unless you are avoiding dairy) and bake at 350 until cheese is schmelty-delicious. You can also add sour cream when serving or add a packet of ranch dressing mix before baking.
FOOD PORN! |
And here's the bday boy. We opened a bottle of wine we got in Sonoma a few years ago. We've been saving these for special occasions, but without a place to store wine in this TX heat, who knows how long they will stay good? So we tried one, a 2005 reserve merlot. It hit the spot.
We ate on the patio and Wyatt enjoyed some time with his Da-da. They shared a bday today, Wyatt reached double digits at 10 weeks!
Happy Birthday Boys! I love you more than I can say! You'll never be sans love. (Ha-just had to throw it in there again.)
