A Recipe A Day - Take 2

Warning: I've got no food porn pics for you! Why? Funny you should ask. I baked some of these delicious bites (which my child doesn't like--what?!?!) yesterday afternoon and well, I overfilled the muffins, I "forgot" them in the oven, they stuck to the bottom of the pan, and they were yummy but certainly not ready for a close-up!

So instead you just get the recipe for one of my favorite treats my mom made us growing up. Just the smell brings me back to weekday mornings she woke up early to make this special breakfast or casual weekend mornings indulging in a homemade breakfast.

Banana Nut Muffins/Bread

INGREDIENTS:

1/2 c shortening (I said they were yummy, not healthy!)
2 c flour
3/4 tsp baking soda
1 c mashed bananas
1 1/2 c sugar
1/2 tsp salt
1/4 c (sour) milk*
2 beaten eggs
1 tsp baking powder
1 tsp vanilla
1 c chopped walnuts

DIRECTIONS:
1.Preheat oven to 350/375 (see below) and grease loaf pans or muffin tins.
2.  Mix dry ingredients in a medium bow and sift.
3. Cream shortening and sugar in large bowl. Add beaten eggs.
4. Add sifted dry ingredients, alternating with milk, bananas, and vanilla.
5. Fill pans/muffin tins about half full.

Muffins 375 degrees for 20-30 minutes.
Mini loaf (3) Bake at 350 degrees for 25-35 minutes.

*To sour milk, pour milk into measuring cup and add about 1/2 tsp. vinegar.
